Grilled Cheese and Apple Special

This is SO good!!! This is the PERFECT after school snack or light lunch.
I recently made this at a friend's house and her kids LOVED it! It is a rare occasion for all four kids to eat the same thing, let alone ask for more! The bit of sweet, sour, spice, and cheese mixed and melted together between buttered wheat bread is exactly what you didn't know you needed.


Recipe Ingredients
makes 2 servings

2 ounces shredded part-skim mozzarella cheese
1/2 small Granny Smith apple, unpeeled, coarsely shredded
1/16 teaspoon ground cinnamon
1/16 teaspoon ground nutmeg
2 teaspoons butter
4 slices whole wheat bread (1-ounce slices)

Cooking Directions
In a small bowl, combine cheese, apple and spices. Mix well, tossing to distribute spices evenly.
Spread ½ teaspoon of the butter on one side of each slice of bread.

Divide apple mixture evenly onto the dry sides of 2 slices of the bread.

Top with remaining bread, making sure the sides of bread with butter are facing out.

Preheat nonstick skillet or griddle over medium heat.
Place sandwiches on griddle and press top slices of bread down firmly with a spatula.

Cook until toasted on both sides, turning sandwiches several times.

This is really the ultimate grilled cheese sandwich. It tastes like the favorite European dessert of cheese and fruit.
