Honey Crunch Chicken

Too good to be true? NO WAY! You CAN make this insanely delicious chicken with only FOUR Ingredients!!!
My family absolutely loves when we have Honey Crunch Chicken! This is the perfect weeknight recipe. These four ingredients work so well together and there is no mixing involved.
Recipe Ingredients
Makes 4 servings
Recipe found in Millie Snyder's 3rd Edition Cookbook, P 83
1 pound boneless, skinless chicken breasts
2 tablespoons plus 2 teaspoons reduced calorie mayonnaise
1 ½ ounces Grapenut cereal, crushed (1/2 cup)
1 tablespoon plus 1 teaspoon honey

Cooking Directions:
Preheat oven to 375 degrees Fahrenheit.
Spray a 1-quart baking pan with nonstick cooking spray.
Rinse chicken and pat dry. Place in prepared pan.

Using a pastry brush, spread mayonnaise over both sides of the chicken.
I found that “painting” the chicken with reduced-calorie mayonnaise seals in the moistness and the cereal on the outside adds a wonderful crunch. You’ll choose this one time and again.

Drizzle evenly with honey.
Spread the cereal over the top sides of the chicken.

Let chicken stand at room temperature for 10 minutes.
Bake, uncovered, for 45 minutes.
You can't really go wrong on choosing sides to go with this dish. We had green beans and a slice of wheat toast.
