Updated: Mar 5, 2020

A Revamped Version of a Classic Dish You HAVE to try!

This baked tuna dish will remind you of your classic tuna casserole but fused with perfect flavor and freshness to keep it a regular dish on your dinner table. A slightly different version of the traditional tuna noodle casserole is quick, easy, and delicious.

Recipe Ingredients:

Makes 6 Servings

Recipe found in Millie Snyder's Lean & Luscious Mediterranean Cookbook, P. 82

2 cups cooked whole-wheat macaroni

10 ounces drained, water-packed tuna, flaked

2 ounces shredded Swiss cheese

½ cup chopped green pepper

½ cup chopped green onions (green parts only)

¼ cup olive oil

½ cup skim milk

¼ cup plain low-fat yogurt

2 tablespoons dried parsley flakes

Dash garlic powder

Cooking Directions:

Preheat oven to 400 degrees.

In a large bowl, combine macaroni, tuna, Swiss cheese, green peppers, and green onions.

Toss until well mixed.

In a small bowl, combine remaining ingredients, mixing well.

Add to tuna mixture, tossing until well combined.

Spoon into a 1 ½ quart baking dish sprayed with a nonstick cooking spray.

Bake uncovered, 20 minutes, until hot and bubbly.

Stir before serving.

PRO TIP: Invest in a Mandolin slicer! They make food prep 110% faster! The one we used in this recipe can be found on Amazon here. Below are some examples of using this mandolin slicer. It is by far our favorite out there!
