Recipe Ingredients
Makes 6 Servings

1 tbs olive oil
18 oz potatoes, unpeeled, sliced 1/8 inch thick
1/2 cup green or red pepper, thinly sliced
1/2 cup sliced onions, thinly
1 minced garlic clove
1 eight-ounce can tomato sauce
1/2 tsp dried oregano
1/4 tsp dried basil
Salt and pepper to taste
3 ounces shredded part-skim Mozzarella cheese
Cooking Directions
Heat oil in a large skillet over medium heat.

Add potatoes, green pepper, onions, and garlic. Cook, stirring frequently, until vegetables are slightly tender, about 5 minutes. Reduce heat to low.
Add tomato sauce and spices, cover, and cook another 30 minutes. Stir occasionally.
Remove from heat. Sprinkle with cheese, cover, and let stand about 3 minutes until cheese is melted.
